Chinese Green Tea, Chinese Black Tea and Chinese Oolong Tea

Unlike green teas black teas are allowed to ferment for many hours before the are either smoke fired ( Lapsang Souchong), flame fired or steamed. Partial fermentation gives Oolong tea more color and flavor than green teas while preserving most of the chemical structure. There are many varieties and origins of Oolong teas while most of them are manufactured in China and Taiwan. Other countries are involved in production of superb semi oxidized teas - Darjeeling Oolong from famous Makaibari estate. Tea fermentation does not produce alcohol. Enzymes in tea turn tea leaves dark brown similar to the leaves fallen from the tree - or cut apple turning brown.

Tea is partially fermented and retains most of the nutrients of green tea and have more distinct flavor and color than their green counterparts.

Lapsang Souchong
This tea has a very smoky aroma .
It is partially dried (pan fired) over smoke

Keemun
This is a very aromatic tea . It is used in many blends to enhance flavor and aroma . Keemun tea is used in most of the English Breakfast blends. It is considered to be equal ( claimed to be superior) to Darjeeling tea.

China White Teas

Freshly hand picked young buds are steamed to stop oxidation (Japanese green teas are steamed) It is considered to be a " tea of teas " - and it is labeled by some companies as a " rare tea ".

Young tea leaves are rolled up in pellets in order to preserve freshness. When steeped leaves open up to make a delicious cup of tea.

Jasmine Tea
The most popular scented tea produced in China, Taiwan, Viet Nam. Green tea is scented with a Jasmine flower essence and jasmine flowers are added. Green tea (most commonly used), black tea and oolong teas can be used as a base.
